{InstaPot} Turmeric Jasmine Rice

As a busy mom, I thrive on convenience and quick meal ideas, not only for dinners but for my weekly meal prep lunches. So the inventions of crockpots, insta pots and air fryers have been a game changer. Oh, and Pinterest haha !

I also found the deliciousness of jasmine rice!! But I wanted to take it up a notch from the usual sticky rice with stir fry veggies so I came up with this recipe for Turmeric Rice.
Not only is the flavor of turmeric amazing, but it is known for it's incredible health benefits. A few being: turmeric has anti-inflammatory properties, it improves digestion, helps prevent arthritis, detoxifies the liver , boots immune system and so much more!

This is not an accurate recipe because when I season, I don't measure, I go for what tastes good for me.
The ratio to rice and water is (1:1.25) so for 2 cups of rice, you use 2.5 cups of water.
Start by rinsing your rice to remove the starches and that helps make it sticky.

Add 2 cups rice and 2.5 cups water to your insta pot.
Then add:
1 container of baby bella mushrooms chopped
2-3 carrots, peeled and chopped.
1/2 onion, chopped.
1 Tbs coconut oil

Now for the flavor!
I added salt and pepper (which you can add more later once you taste it cooked)
Many dashes (1-2 Tbs) of tumeric, again, to you liking
and about a tablespoon of garlic powder.

Now you let the magic happen all on it's own.
Lock up your insta pot and make sure it's on pressure cook.
Set mode to High Pressure
Set time for 5 minutes.
Once 5 minutes is up, let the rice stay in the cooker for another 10 minutes.
Once the 10 minutes is up, release the pressure carefully and remove lid.
Stir and enjoy!
